The fruit pizza is a popular dish that my late mother, Georgia Branson, would make for our family during hot summer months. This cool and sweet treat is a great snack for any celebration or just a hot summer day. Although she is not here to prepare it for us today, her recipes are some of the closest things we have to bring back memories of her.
Recently, several of my family members and I were reminiscing on old snacks we loved, and the fruit pizza came up. Since it has been years since we’ve had it, I decided that I would surprise them for our Juneteenth celebration this year. It turned out to be very delicious, and I’m sure I have made my mother proud by keeping her recipes alive.
Fruit Pizza
Ingredients:
- 1 roll of sugar cookie dough
- Cool Whip
- Cream cheese
- 1 cup of sugar
- Strawberries, grapes, kiwi fruit, or fresh fruit of your choice
Directions:
- Bake sugar cookie dough in a sheet pan for 15 minutes.
- Blend Cool Whip, cream cheese, and 1 cup of sugar together.
- Slice fruit for toppings.
- Take the sugar cookie out of the oven, and let it cool.
- Once the cookie is cool, spread the blended mix over the cookie first, and place sliced fruit on top.
- Let your fruit pizza chill for 30 minutes or more.
- Enjoy!
